Why I Made These
Usually, I don’t bother with Easter treats so neat. So I tossed everything into tiny cups, not caring if they look perfect. Because perfection in bites? That’s a myth. What matters is the hit of tangy cheese, the burst of juicy strawberry, and the crunch of a graham cracker crust that’s just enough. This time of year, I want less fuss, more memories. And maybe a reason to keep strawberries in the house long after Easter’s gone.

- Combine crushed graham crackers and melted butter in a small bowl until evenly coated and crumbly. Press approximately one tablespoon of mixture into the bottom of each mini cup to create a firm crust. - Top each with sliced strawberries, arranging them attractively and pressing slightly into the filling. The strawberries should cover the cream cheese layer partially or fully, depending on preference.1 cup fresh strawberries
- Refrigerate the assembled bites for at least 1 hour before serving to allow flavors to meld and the filling to firm up. Serve chilled for best texture and appearance.
