  • 1/4 cup melted unsalted butter to bind the crust
  • 8 oz cream cheese softened
  • 1/4 cup sugar granulated sugar
  • 1 tsp vanilla extract vanilla extract
  • 1 cup fresh strawberries hulled and sliced

Equipment

  • Mini serving cups or dessert glasses
  • Mixing bowls
  • Measuring spoons and cups
  • Spatula or spoon
  • Refrigerator

Method

  1. Combine crushed graham crackers and melted butter in a small bowl until evenly coated and crumbly. Press approximately one tablespoon of mixture into the bottom of each mini cup to create a firm crust. Place in the refrigerator to set while preparing the filling.
1 cup crushed graham crackers, 1/4 cup melted unsalted butter
  2. In a mixing bowl, beat softened cream cheese with sugar and vanilla extract using a spatula or hand mixer until smooth and creamy, about 2-3 minutes. The mixture should be free of lumps and have a slightly fluffy appearance.
8 oz cream cheese, 1/4 cup sugar granulated sugar, 1 tsp vanilla extract vanilla extract
  3. Remove the crusted cups from the refrigerator. Spoon or pipe a generous layer of the cream cheese filling over the crust in each cup, smoothing the top with the back of a spoon or spatula.
    8 oz cream cheese
  4. Top each with sliced strawberries, arranging them attractively and pressing slightly into the filling. The strawberries should cover the cream cheese layer partially or fully, depending on preference.
    1 cup fresh strawberries
  5. Refrigerate the assembled bites for at least 1 hour before serving to allow flavors to meld and the filling to firm up. Serve chilled for best texture and appearance.
