Method
 

  1. Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.
  2. Slice the bread into 1-inch thick pieces for sturdy bases that will crisp well.
  3. Brush each bread slice lightly with olive oil to help them crisp and add flavor.
  4. Spread a generous spoonful of melty cheese on top of each slice, covering the surface evenly.
  5. Sprinkle chopped herbs over the cheese for freshness and aromatic complexity.
  6. Place the prepared slices on the baking sheet and bake for about 10-12 minutes, until the edges are golden and the cheese is bubbling and slightly browned.
  7. While baking, mix honey with chili flakes or hot sauce in a small bowl to create a spicy-sweet drizzle.
  8. Once out of the oven, drizzle the spicy honey generously over each toast bite for a sweet-heat contrast.
