Method
- Place eggs in a saucepan and cover with water.
- Bring to a boil, then simmer for 10–12 minutes.
- Transfer eggs to cold water and cool completely.
- Peel eggs and slice in half lengthwise.
- Remove yolks and place in a bowl.
- Mash yolks with mayonnaise, mustard, lemon juice, and honey.
- Spoon or pipe filling into egg whites.
- Sprinkle with smoked paprika and garnish with chives.
- Chill briefly and serve.
