Ingredients
  

  • 1 cup fresh pineapple chunks peeled and cored
  • 1/2 cup coconut milk full-fat preferred
  • 1 1/2 oz white rum adjust to taste
  • 1 cup ice cubes for blending
  • 1 tbsp simple syrup optional for extra sweetness

Method
 

  1. Measure out 1 cup of fresh pineapple chunks and place them into the blender.
  2. Add 1/2 cup of coconut milk to the blender with the pineapple.
  3. Pour in 1 1/2 oz of white rum into the blender.
  4. Add 1 cup of ice cubes to the blender to achieve a frosty consistency.
  5. Optional: add 1 tablespoon of simple syrup for extra sweetness.
  6. Blend all ingredients on high until smooth, thick, and frosty, usually about 30-45 seconds. The mixture should have a creamy, uniform texture with no large pieces remaining.
  7. Pour the blended Piña Colada into chilled glasses. Garnish each with a pineapple wedge and a maraschino cherry for a colorful presentation.
