Method
- Preheat oven to 180°C (350°F)
- Place baking dish on center oven rack.
- Grease baking dish with butter or oil to prevent sticking.
- Heat oil in pan and sauté onion and bell pepper
- Add spinach and cook briefly
- In bowl, whisk eggs, milk, salt, pepper, and seasoning
- Stir in cheese, vegetables, and optional meat
- Pour mixture into baking dish
- Bake 35–40 minutes until center is set and no longer liquid.
- Let rest 5–10 minutes so casserole firms up and slices cleanly.
- Makes approximately 6 slices.
- Serve the dish
Notes
For extra flavor, add cooked bacon bits or sautéed mushrooms before baking.
