Method
 

  1. Preheat oven to 180°C (350°F)
  2. Place baking dish on center oven rack.
  3. Grease baking dish with butter or oil to prevent sticking.
  4. Heat oil in pan and sauté onion and bell pepper
  5. Add spinach and cook briefly
  6. In bowl, whisk eggs, milk, salt, pepper, and seasoning
  7. Stir in cheese, vegetables, and optional meat
  8. Pour mixture into baking dish
  9. Bake 35–40 minutes until center is set and no longer liquid.
  10. Let rest 5–10 minutes so casserole firms up and slices cleanly.
  11. Makes approximately 6 slices.
