Ingredients

  • 1 cup sugar cookie dough store-bought or homemade
  • 8 oz cream cheese softened to room temperature
  • 2 tablespoons sugar or honey/agave
  • 1 cup assorted fresh fruit strawberries, blueberries, kiwi, etc.
  • 1 tablespoon lemon juice to prevent browning and brighten frosting
  • 2 tablespoons jelly or glaze apricot or peach preserves, optional
  • Optional toppings shredded coconut, chopped nuts, chocolate drizzle

Equipment

  • Mixing bowls
  • Spatula
  • Baking sheet
  • Rolling pin
  • Knife
  • Cutting board

Method

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Roll out the sugar cookie dough on a lightly floured surface into a 12-inch circle, then transfer it to the prepared baking sheet.
  3. Bake the crust for about 12-15 minutes until golden around the edges. Let it cool completely on a wire rack.
  4. In a mixing bowl, beat the softened cream cheese with sugar and lemon juice until smooth and creamy, about 2-3 minutes.
  5. Spread the frosting evenly over the cooled cookie crust with a spatula, covering the entire surface gently to avoid tearing the crust.
  6. Chop the fresh fruit into neat slices or small pieces and arrange them carefully on top of the frosting, creating a colorful pattern.
  7. Lightly brush the fruit with melted jelly or glaze for shine and extra sweetness, if desired.
  8. Add optional toppings like shredded coconut, chopped nuts, or a drizzle of chocolate for extra texture and flavor.
  9. Slice the fruit pizza into wedges and serve immediately, enjoying the crisp crust, creamy topping, and juicy fruit in every bite.

Notes

Keep the assembled pizza refrigerated if not serving immediately. Best enjoyed within 4 hours for optimal freshness and texture.
