Preheat your oven to 200°C (400°F). Peel the carrots if desired, then cut them into 2-3 inch chunks for even roasting.
In a mixing bowl, whisk together honey, olive oil, minced garlic, chopped herbs, and a pinch of salt and pepper until the mixture is smooth and fragrant.
Add the carrot chunks to the bowl and toss them thoroughly to coat each piece evenly with the honey-herb mixture. The carrots should be glossy and sticky.
Spread the coated carrots in a single layer on a baking sheet, making sure they aren’t overcrowded so they caramelize properly.
Roast in the oven for 25-30 minutes, flipping the carrots halfway through. They should turn golden, caramelized around the edges, and smell sweet and fragrant.
Once done, remove the carrots from the oven and let them rest for about 5 minutes. The glaze will thicken slightly and intensify in flavor.
Transfer to a serving dish, optionally drizzling with a little extra honey and garnishing with fresh herbs or flaky sea salt for added flavor.
Serve warm alongside grains, roasted meats, or as a cozy, elegant side on its own. Enjoy the tender texture and complex sweet-savory flavor.
