Unexpectedly Simple: Watermelon Pops That Feel Like Summer Already Started

Why I Stumbled Into These

One afternoon I was staring at a near-empty watermelon, wondering if I should just toss it or get creative. Instead of a fuss, I cut some thick chunks, stuck a popsicle stick in. The crunch of the rind, the way the juicy flesh squished around it—no fancy ingredients. Just watermelon. Sometimes, we’re so busy chasing flavor combos or trendiness, we forget plain fruit can surprise us.

Right now, especially with how crazy everything outside feels, these little pops feel like a small rebellion. A slice of summer in your freezer—no fuss, no added sugar, just watermelon’s honest, sweet, watery punch. It’s funny how the simplest things can remind us that sometimes, less really is more.

Watermelon Popsicles

Ice cubes made from pure watermelon flesh are prepared by cutting the fruit into chunks, inserting sticks, and freezing until solid. The resulting popsicles have a juicy, watery texture with a vibrant appearance, showcasing the bright red and green colors of watermelon. They are simple, refreshing treats that highlight the natural sweetness of watermelon without any added ingredients.

Ingredients

  • 1 whole Watermelon seedless or de-seeded, ripe

Equipment

  • Sharp knife
  • Cutting board
  • Watermelon Popsicle Molds
  • Freezer

Method

  1. Use a sharp knife to cut the watermelon into thick chunks, approximately 2-inch pieces, ensuring each piece can hold a popsicle stick.
  2. Insert a popsicle stick into the center of each watermelon chunk, pressing firmly to ensure it stays in place during freezing.
  3. Arrange the watermelon chunks with sticks upright in watermelon popsicle molds, filling each mold to the top.
  4. Place the molds with the watermelon chunks in the freezer and freeze for at least 4 hours, or until completely solid.
  5. Once frozen, remove the molds from the freezer and run warm water briefly over the outside of each mold to loosen the popsicles.
  6. Carefully pull out the watermelon popsicles from the molds, holding the sticks, and serve immediately or store in a sealed container in the freezer.

Picking out the chunks of ripe watermelon, I realize how much I needed this reset. No perfect presentation, no Instagram hype. Just cold, fresh fruit. That’s probably all I really want right now—something real, easy, and a little bit nostalgic.
